The food of Morocco epitomises the vibrant cultural flavour of the nation. Delightfully affordable, thoroughly spiced and served with enthusiasm, I must admit that Moroccan meals spurred a whole new level in my food photo obsession.
Think caramelised onions with olives and prunes, and garlic coated olives of green, black and brown.
Breathe in steaming tagines with tender lamb and turmeric-yellow potatoes, served with fluffy couscous and creamy pilaf.
Enjoy fresh mint crushed into a tumbler of tea and spice-sprinkled kofta on crusty pide. Love tomato drenched chicken with chips on the side.
Have hot milk on cornflakes followed by pancakes, semolina cakes and exotic fruits.
Try camel burgers that taste gamey and rich and grilled chicken salads that pop with fruity flavour.
Vibrant plates of orange slices coated in cinnamon for dessert.
Glass-bottled Coke, Orangina and Sprite for a cool sugar hit in the hot Moroccan day.
Fresh, fragrant salads of cucumber, mint, parsley and tomato.
Expensive red wine in a very dry country (procured using a friend, a ‘guide’ and a crazy motorbike ride).
Markets with freshly butchered meat hanging above, fruit lined up for squeezing and dessert carts tempting you at every turn.
Boiled eggs, almonds and fruity conserves on the side.
Try little sausages sizzled fresh at the market and dipped in chilli sauce.
Awake with stiff black espresso sweetened with two sugars and Berber tea served from a rug on the sand.
Expect tagines everywhere… in the Sahara Desert, in Marrakech Square, in the Fez Medina and on Tangier’s Mediterranean coast.
